the last few days of summer...

Last night we went to the Summerset Festival at a local park. I packed us a picnic dinner, one of our favorite summer meals. They were going to have a hot air balloon glow at dusk, but it was too windy. So, instead they just shot off the fire. I was a bit disappointed, but it was still a fun night!





Cold Chicken Salad Recipe
2 large boneless skinless chicken breasts, cooked and diced (I usually grill the chicken on the BBQ)
4 celery stalks, chopped
4 green onions, chopped
4 cups of red or green grapes
1/2 to 1 cup mayo (depends on how much you like)
1 tablespoon lemon juice
salt and pepper to taste
Mix together and put in the fridge until you are ready to eat!
