Happy Birthday, Dr. Seuss!

we love books in this house and Dr. Seuss is one of our favorites!

i set some crafts on the table and the kids got busy working on them, while i was busy painting our kitchen cabinet doors.  not as much fun, but it needs to get done.

on saturday morning, i made banana peanut butter pancakes to celebrate Dr. Seuss' birthday.

Dr. Seuss week...day 6

yesterday, the kids woke up to a fun-filled morning!
i made them thing 1 and thing 2 hats out of blue feather boas.
our little lady had one of her friends over for a play date too.
i made them a fun lunch...
cat in the hat pancakes
green hard boiled eggs
fruit on a stick to look like the cat's hat
fish bowl jello with swedish fish
we also did a craft and make truffula trees from the book The Lorax.  we wrapped pipe cleaners around a pencil and made a pom pom for the top.

Dr. Seuss week...day 4

this morning, we had flapjack flapper's flapjacks.

it comes from the Dr. Seuss book...Oh Say Can You Say?

i'm not a huge fan of pancakes, but these are very good. i think it is the bananas and peanut butter that make them so good!

this was another recipe from Green Eggs and Ham Cookbook.

Dr. Seuss week...day 1

i love Dr. Seuss books and so do my kids! in honor of Dr. Seuss' birthday which is march 2nd, we will be having some special food and fun!

it wouldn't be right to start off our week without some fun decorations! i have a bunch of Dr. Seuss books i have bought at thrift stores over the past several years and have used them to decorate with. this year, i made placemats out of construction paper and pages from different books. i had them laminated so that i could use them for more than one year. the total cost of this project was $2...i already had the books and the construction paper, i just paid for the laminating.
our morning began with green eggs and ham, which always confuses my little lady as to how i get the eggs green. one day she will learn that her momma is addicted to using food coloring!

Dr. Seuss week...day 5

This morning we read...

while eating...
green eggs and ham.

Then, she put this together...
a Dr. Seuss puzzle I found.

And of course, our last craft for the week, had to be this...

our interpretation of Daisy-Head Mayzie.
She loved the story and thought it was hilarious that the girl had a flower on her head. This was a spontaneous craft. We were in the craft store this week and I saw this giant daisy and showed my little lady it and she told me it would be perfect for her to look like Miss Mayzie! And there you have it!

Dr. Seuss week...day 4

It's all about the food! We love to eat and I was inspired to create my own version of Schlopp.

The idea can from this book...

I wanted this to be a fun breakfast meal...I use my homemade granola and topped it with yogurt and a cherry. Then I made homemade angel food cake the night before so it would be ready in the morning. I topped the cake with a little bit of cool whip and a of course another cherry!

You could easily turn Schlopp into a dessert too!

Dr. Seuss week...day 3

We made the fish in the fish bowl from the book, "The Cat in the Hat." We used pink tissue paper to make the fish. We glued the fish onto the bowl and then I slipped it into a Ziploc bag to create the look of glass. We stapled it to the paper and then cut off the excess bag. I think it turned out pretty cute!

Dr. Seuss week...day 2

one fish

two fish

red fish

blue fish

Can you guess what our day was about???

For lunch, I made some fish. My little lady loved it and said, "Mommy, you are the best cooker ever!" I love that she has a love for good food!

Whitefish with lemon vinaigrette
8 Tbsp. olive oil
half of an onion, chopped
6 Tilapia fillets
flour for dredging, seasoned with salt & pepper
white rice

for the vinaigrette:
1/4 cup fresh lemon juice
1/4 cup lightly packed fresh Italian parsley leaves
2 cloves garlic
2 tsp. finely grated lemon zest
1/2 tsp. salt
1/4 tsp. pepper
1/3 cup olive oil
Blend ingredients except the oil in a food processor or blender. With the machine running, gradually blend in the oil.

Cook white rice according to package. In a skillet, saute onions in 2 Tbsp. oil. Cook for 3-5 minutes, then I add it to the cooked white rice. Once the onions are removed from the skillet, add 3 Tbsp. oil to skillet. Dredge the Tilapia in flour and then at it to the skillet over medium-high heat. Cook fillets for 3 minutes on each side. You should have a nice golden brown crust on each side.

Serve the fish over a nice bed of rice. Drizzle the vinaigrette over the fish. Serves 6 and makes delicious leftovers too!

It was such a beautiful day that we decided to do the craft outside. Well, most of it anyways...the wind came up, so we finished it in the house. We made our own fish art, inspired by the great colors Dr. Seuss used in his books.
