Dr. Seuss week...day 2

Can you guess what our day was about???

For lunch, I made some fish. My little lady loved it and said, "Mommy, you are the best cooker ever!" I love that she has a love for good food!

Whitefish with lemon vinaigrette
8 Tbsp. olive oil
half of an onion, chopped
6 Tilapia fillets
flour for dredging, seasoned with salt & pepper
white rice

for the vinaigrette:
1/4 cup fresh lemon juice
1/4 cup lightly packed fresh Italian parsley leaves
2 cloves garlic
2 tsp. finely grated lemon zest
1/2 tsp. salt
1/4 tsp. pepper
1/3 cup olive oil
Blend ingredients except the oil in a food processor or blender. With the machine running, gradually blend in the oil.

Cook white rice according to package. In a skillet, saute onions in 2 Tbsp. oil. Cook for 3-5 minutes, then I add it to the cooked white rice. Once the onions are removed from the skillet, add 3 Tbsp. oil to skillet. Dredge the Tilapia in flour and then at it to the skillet over medium-high heat. Cook fillets for 3 minutes on each side. You should have a nice golden brown crust on each side.

Serve the fish over a nice bed of rice. Drizzle the vinaigrette over the fish. Serves 6 and makes delicious leftovers too!

It was such a beautiful day that we decided to do the craft outside. Well, most of it anyways...the wind came up, so we finished it in the house. We made our own fish art, inspired by the great colors Dr. Seuss used in his books.
