Spicy Jalapeno Shrimp Pasta
2 tablespoons olive oil
2 teaspoons minced garlic
1 jalapeno, seeded and diced small
2 cups of chopped grape tomatoes
1/2 lb. to 1 pound cooked shrimp, thawed
8 oz. thin spaghetti noodles
1 cup shredded Parmesan cheese
In a stock pot, cook noodles according to package.
In a large skillet, heat oil on medium heat. Add garlic and jalapeno. Saute for 2 minutes.
Add shrimp, cook for 2 minutes.
Add grape tomatoes, cook until heated, just a couple of minutes.
Add cooked spaghetti noodles and Parmesan cheese. Allow cheese to melt and serve.
I usually serve it with garlic bread and salad. It is a simple and quick dish to eat! It is also nice to make in the summer, when you have a bunch of fresh tomatoes you have just picked from your garden!
