a couple of weeks ago, i shared with you how to make mozzarella cheese.
the same day i made the cheese, i used the leftover whey to make ricotta cheese. it really doesn't take much effort to make the ricotta cheese. all you need is some more milk, lemon juice and flaked salt. i followed James Leverentz recipe from his book "The Complete Idiot's Guide to Cheese Making."
i used some of the ricotta to make lemon ricotta poppy seed muffins. it was also a recipe found in the same cookbook.
