This is my second week to cook something new and inspired by the South. Last week was Gumbo and I thought this week I would make Red Beans & Rice. This recipe was a bit easier and there was no roux to make. I also was able to use my pressure cooker that my man bought me several years ago and never used. I used it for the first time last night when I made my own refried beans.
Cutting up the celery, onions, bell pepper. I also made a Cajun seasoning with different spices.
I added the veggies to the cooked sausage.
Served over rice...yummy!
